What would the world do without a good pesto? One of my cousins is completely obsessed with the stuff, literally spreads it on anything! I am an avid pesto lover and normally don’t stray to far from the regular basil / pine nut combo.. however, one lunchtime working from home.. I found myself hankering after a good bowl of pesto pasta only to find I didn’t have any basil (or any pine nuts for that matter!) but what I did have was walnuts and some parsley, and this is how this beauty was born!
Time: 10 mins
1 bunch of parsley
3 garlic cloves
1/3 cup walnuts
2 tbsp parmesan (or vegan parmesan 🙂 )
1/2 cup olive oil (you may require more)
1. Throw all the ingredients in the blender, and blend until smooth
2. Before coating pasta with it, throw in a couple of tbsp of the pasta water, it emulsifies and creates the most creamy consistency!
