Broccoli and White Bean Burgers


Really fancied a bean burger this evening, but had kinda overdone the black bean burger thing (well for a while anyway, they are my fave!), so had a rummage in the kitchen to see what I could find… and there it is, I had broccoli in one hand and cannellini beans in the other, a collab was clearly the only way forward, so here go’s!…

Serves: 3-4
Time: under an hour

1 whole broccoli head – chopped into florets
1 can of cannellini beans – drained
handful of pinenuts
5 garlic cloves
1 tsp Dijon mustard
1 cup or so panko breadcrumbs

1. Place broccoli in pot and steam/boil under tender (not mushy)
2. Place in blender with pine nuts, 5 garlic cloves, dijon mustard, salt and pepper and blend until smooth-ish
3. Smush cannellini beans in a seperate bowl with a potato masher roughly, it’s important to keep the consistency
4. Place the broccoli mix in with the cannellini beans and add the panko breadcrumbs a little at a time whilst mixing. The end mix needs to be firm
5. I like to leave these in the fridge to firm up a bit but you don’t have to. When ready to cook, bake in the oven at 200°for about half an hour, flipping halfway and then place on grill for another 2 mins each side
6. Serve alone with salad, in regular burger buns or in cloud bread buns and some sweet potato fries on the side
