Baked Sweet Potato ‘Crisps’


Any of you get peckish when you are home waiting for your dinner / whilst making dinner? Well, I am pretty much ravenous when I get home and there’s something amazing on the stove! I discovered this when I got home the other night and realised there were NO SNACKS – I was not pleased.. however, my husbands fabulous (please note sarcasm) food shopping skills meant we had like a 100 sweet potatoes at home so I thought I’d whip up some snacks of my own! These are healthy and can totally count towards one of your 5 a day 😉 – and are great with any dip really, hummus is a winner for me!

Serves: 1 potato per 2 persons
Time: 10 mins to prep, 30-ish mins for baking

sweet potatoes
olive oil
garlic powder
chilli powder/ paprika
onion powder
cumin powder
a little cornstarch
any other seasoning you fancy … if I had it I would totally cover it in salt n vinegar seasoning (droolinnngggg!)

1. Preheat oven to 180°
2. Slice potatoes with a mandolin, if you don’t have a mandolin, you can slice by hand but they won’t be as thin and may require longer cooking. If you are doing this, please please please careful slicing! Some graters have a mandolin type blade, you could also use that too. Place slices on a lined baking tray
3. Mix seasoning and cornstarch together and coat the slices finely. You’re going to have to use your hands for this but its fun I promise!
4. Place tray in oven and let it bake for about 30 mins, every 10 mins or so take the tray out and toss the slices to ensure both sides get crispy. They need to be crisp and maybe a tiny bit charred around the edges – don’t let burn they really won’t taste great!
5. Serve with dip, guacamole, hummus, melt some cheese on top – anything goes!
