I know i’m not alone when I say I wish that I had the willpower to wake up early enough to have breakfast at home but unfortunately my bed has made that near enough impossible! Because of this I know I have to prep something healthy and delicious rather than panicking and grabbing something from a cafe on my way to work. Overnight oats are one of the most simplest and easiest breakfasts to prep, and the best bit if you hadn;t guessed already – it can be made the night before!

Serves: 1
Time: 10 mins

Ingredients
1/2 cup oats
1 tbsp chia seeds
1 tbsp ground flaxseeds
1/2 tsp cinnamon powder
1/2 tsp ginger powder
1/4 tsp nutmeg
1/2 scoop vanilla protein powder (optional)
1 tbsp nut butter of your choice (I chose almond)
1 cup of nut milk of your choice (my favourite is roasted hazelnut!)
fruit of your choice
cacao nibs (optional)

Instructions
1. Add dry ingredients into a mason jar (or equivalent) and mix
2. Add nut milk and stir till smooth
3. Place in fridge
4. Before consuming, top with your choice of nut butter(s), fruits, cacao nibs and other toppings you desire e.g crushed nuts, dates.. the possibilities are endless! You can of course use cocoa powder and essences to change the overall flavour too, I’ve used rosewater (with strawberries) and cocoa powder with chunky peanut butter for a treat!
