Was exceptionally hungry the evening I made this.. Pretty much inhaled this delicious bowl of tofu and broccoli, it’s super easy to make, uses minimal ingredients and will satisfy even the hungriest carnivore!
Serves: 2
Time: 30 mins (approx)
Ingredients
1 packet of Tofoo (or similar firm tofu)
1 head of broccoli
1 lemon (rind and juice)
3 garlic cloves
soy sauce / tamari
balsamic vinegar
maple syrup
black sesame seeds (for sprinkling)
Instructions
1. Slice tofu lengthwise into 1/2 inch slices
2. Make marinade. Mix up the lemon juice, lemon rind, soy sauce, balsamic vinegar and minced garlic to whichever ratio you prefer. I went heavy on the soy and balsamic 🙂
3. Place sliced tofu in marinade for about 5-10 minutes
4. Bake tofu for approx 25 mins (can leave longer depending on how crispy you want it) on 200º
5. Meanwhile, boil or steam broccoli under tender (not smushy!)
6. Once broccoli is done, toss in a mixture of olive oil, lemon juice, lemon rind (go heavy!), salt and pepper
7. Serve immediately over brown rice, noodles (any carb of your choice!) and sprinkle with black sesame seeds
