Sometimes you want something fancier than just plain fruit but don’t want to stray from your 5-a-day! This simple compote recipe can be changed up to include any fruit of your liking.
Time: 20-30 mins
fruit of your choice (I used pear, apple and blueberries here)
couple tablespoons of water
sugar / sweetener (optional)
spices e.g. cinnamon, nutmeg, ginger (optional)
1. Place fruit and water into a pot. If using harder fruit such as apples put these in about 10 minutes before you add softer fruits like berries
2. Add cornstarch mixed with a little more water (and also any sugar, sweeteners or spices you may want to add)
3. Gently ‘stew’ on a low to medium heat until the fruit softens – you can keep the fruit whole or smush it a little with a fork
4. The cornstarch should thicken the compote a little – now ready to serve!
