Experimenting with lentils today! With the freezing weather in mind, I decided to go soupyyyy!
A super easy, light yet filling Spiced Green Lentil & Coconut Soup (and by all means, an entire sourdough loaf, this stuff is seriously dippable!)
Serves: 2
Time: Under 30 mins
Ingredients
1 can green lentils
1 can coconut milk
4 cloves garlic
1 small red onion
1 tsp turmeric
2 tsp cumin powder
1/2 tsp cinnamon powder
1 tsp red chilli powder
1 litre vegetable stock
1 tbsp coconut oil
1/2 cup chopped cilantro
1 lemon
Instructions
1. Heat coconut oil in a pot on medium heat, once the oil is hot, add chopped garlic and onion, cook until until the onion is soft
2. Drain green lentils and add to pot, mix with onions and garlic
3. Add turmeric, chilli powder, cumin powder and cinnamon and cook for a couple of minutes
4. Add stock and 1/2 can coconut milk (save some of the cream) and simmer for 10 minutes
5. Take off the heat, and using a hand blender, blend until smooth
6. Ladle into bowls, squeeze a bit of lemon juice on top and stir through. Top with a couple of tbsp of coconut coconut milk, sprinkle with a little cilantro and serve immediately.
